The Best Fried Fish

INGREDIENTS
A-1 steak sauce (or italian dressing)
powdered pancake mix
walleye or any other white meated fish fillet
salt and pepper


Directions
Marinade fish in the steak sauce or dressing over night

Coat in pankake mix

Add salt and pepper

Fry until golden brown

You should use just enough peanut oil to cover the fish fillets completely. Walleye works very well for this recipe. 


Southern Fried Catfish

INGREDIENTS
4 cups yellow cornmeal
3 tbs Tony's cajun seosoning
2 tbs lemon pepper seasoning
2 to 3 lbs of catfish fillets
1/2 gallon of Cooking oil

Directions
Preheat oil to 350.

Mix dry ingredients.

Roll fish in dry batter.

Drop in hot oil and cook until it floats. It cooks a lot more even if you don't overload the fryer. 


Foil Steamed Fish

INGREDIENTS
1 whole fish, cleaned (2-3 pounds)
1 tomato
1 onion
1 lemon
salt
pepper

Directions
Slice tomato, onion and lemon thin.

Tear allminum foil 2&1/2 times the length of the fish.

Layer half the sliced onion, lemon & tomato on the foil.
( this will keep fish from burning)

Season fish with salt, pepper and lay it on top.

Layer the rest of the vegetables on the fish and seal the foil tightly.

Grill for about 45-60 minutes turning every 15 minutes.


Alabama Bass Salad

INGREDIENTS
4 MED Bass filets (no bones)
8 oz white vingar
1 large onion
1/3 cup olive oil
1 cup ice cold spring water
1/2 tsp salt
1/2 tsp black pepper

Directions
Boil bass filets for 8 mins take out of water let drain and cool.

Chop onion.

Mix vingar onion,olive oil,salt,pepper in bowl.

Take fork and flake Bass filets into small chunks.

Add Bass to mixture.

Add ice water.

Stir and let stand in covered bowl.

Refrigerate over night.

Serve with crackers.

GREAT!!! 


Easy Tartar Sauce

INGREDIENTS

1 Cup Mayo
1 Lemon (real lemon juice will work too)
1 tbs Sweet pickle relish
1/4 tsp Onion powder
1/8 tsp Garlic powder
1/4 tsp Dill (optional)

Note: all measurements are approximate - feel free to experiment and adjust this recipe to your taste.

salt and pepper to taste


Directions

Roll lemon on counter to free up the juice inside. Cut Lemon in half and squeeze 1 tsp of juice into mayo (save the rest of the jucie to squeeze over fish). Add Relish, Onion, Garlic and Dill. Gently mix al ingredients and place in refrigerator for several hours before using (allows the flavors to blend/mature).



Variations:
========

- Add a little Horse radish for some extra kick.
- Replace the Lemon with a Lime.
- Replace the Sweet Relish and Dill with Dill Relish or Dill Cubes.
- Use 1 Tbs finely chopped onion instead of Onion powder.
- Use 1/8 tsp minced Garlic instead of Garlic powder.

Best Beer Batter

INGREDIENTS
1 cup beer
1 cup pancake mix
1 tablespoon paprika
2 tablespoons old bays
salt

Directions
Mix dry ingredients, then add beer. this can even be done in advance in a zip lock bag and add beer at last minuet. let sit for a few minuets and add fish filets. fry in hot buttery crisco. this will make about 30-40 bluegill/perch/crappie fillets.Yum. 


                               Creole Catfish Stew

INGREDIENTS

2 tablespoons cooking oil 
1 onion, chopped 
2 ribs celery, cut into 1/2-inch slices 
1 green bell pepper, cut into 1/2-inch strips 
1 teaspoon dried thyme 
1/2 teaspoon dried oregano 
1/2 teaspoon mustard powder 
1/2 teaspoon Tabasco sauce 
1/2 teaspoon fresh ground black pepper 
1 teaspoon salt 
1/2 cup dry white wine 
1 3/4 cups canned crushed tomatoes in thick puree 
3 cups canned low sodium chicken broth 
2 cups frozen baby lima beans, (one 10-ounce package) 
2 cups frozen corn kernels, or fresh (cut from about 3 ears) 
2 pounds catfish fillets, cut into 1 1/2-inch pieces 
2 tablespoons fresh parsley, chopped

Directions

In a large pot, heat the oil over moderate heat. Add the onion, celery, and bell pepper and cook, stirring occasionally, until the onion is translucent, about 5 minutes. Stir in the thyme, oregano, mustard, Tabasco sauce, pepper, and 1/2 teaspoon of the salt. Add the wine and cook until almost evaporated, about 4 minutes.

Add the tomatoes and broth to the pot and bring to a boil. Reduce the heat and simmer, partially covered, for 10 minutes. Add the lima beans and simmer for 3 minutes. Stir in the corn and simmer 4 minutes more. Add the catfish and the remaining ½ teaspoon salt, bring back to a simmer, and cook until just done, about 2 minutes. Serve topped with the parsley.




I went down to the sporting goods store and got a new rod and reel for my wife.....pretty good trade, don't ya think?



Easy Muskie Baked Italian Style


INGREDIENTS

1 Pound Boneless Muskie Fillets
3 tbsp. Olive Oil
1 pkg. any Italian short pasta
1 Jar of your favorite spaghetti sauce
1/2 pkg. Shredded Mozzarella Cheese
1/2 cup Parmesan Cheese

Directions




Prepare the pasta according to pkg. instructions. Add one tbsp. olive oil so it does not stick together.


Coat interior of Casserole dish with the rest of the olive oil. Fill prepared dish about 2/3 full with the cooked pasta. Spoon a thin layer of spaghetti sauce over the noodles. Put a layer of fillets on the pasta and add more sauce to cover it.


Cover the Casserole dish and bake in a 350 oven for 15-20 minutes or until it flakes easily with a fork. Sprinkle fish with shredded Mozzarella cheese and top with Parmesan cheese. Uncover and cook for 5 minutes more.
